When we think about summer, one of the first things that spring to everybody’s minds is ice cream! It certainly was the case when The Lost Gardens of Heligan’s Head of Trading, Nicolas Legendre teamed up with award winning Callestick Farm in Truro and came up with a truly deliciously unique ice cream- Rhubarb and Cornish Sea Salt Caramel.

“Salted caramel is a continuing trend among consumers and we wanted to deliver this flavour as well as incorporating Rhubarb; a vegetable grown at Heligan for most of the year. Rhubarb is iconic to us, as we use a traditional Victorian technique to force the rhubarb to grow in cloches towards the end of winter. Callestick agreed to use some of our own produce cooked on site, to flavour this ice cream giving it a real Cornish twist.” - Nicolas Legendre, Heligan Trading Manager

This one of a kind flavour combination has gone down a storm and has seen people queuing up outside the aptly named ‘Giant Rhubarb’ ice cream hut, at The Lost Gardens this summer.

Many people do not know that Rhubarb is actually a vegetable, contains no saturated fat or cholesterol and is high in dietary fibre. Rhubarb is also rich in Vitamin A, which is essential for healthy eye care and Vitamin K, which has been linked to brain and neuronal health, helping to delay or even prevent the onset of Alzheimer’s disease.

Callestick Farm is a family run business not far from The Lost Gardens whose herd of dairy cows are fed on fresh grass, which produces much more beneficial vitamins and minerals than fodder fed animals. The main reason Callestick’s ice cream tastes so good is that it is made using Cornish treasure- Clotted cream! Clotted cream is thicker and richer than most creams, which is what gives it a more concentrated flavour.

Cornish Sea Salt is a pure, natural sea salt and is rich in minerals and lower in sodium making it a healthier choice over heavily processed table salts. This union of salt direct from the Cornish coast, ice cream from an award winning Cornish farm and rhubarb grown in the finest productive gardens in Britain, makes this ice cream one of the most unique in the world!
